Hearty Shepherd's Pie
Ingredients
- 1 tbsp olive oil
- 1 lb ground lamb or beef
- 1 onion, chopped
- 1 cup mixed vegetables (peas, carrots, corn)
- 1 cup beef broth
- 2 tbsp Worcestershire sauce
- 3 cups mashed potatoes
- 1/2 cup shredded cheddar cheese
Steps
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large oven-safe skillet over medium-high heat. Brown ground meat, breaking it up with a spoon. Drain excess fat.
- Add chopped onion and mixed vegetables to the skillet. Cook for 5 minutes until softened. Stir in beef broth and Worcestershire sauce; simmer for 5 minutes.
- Spread the mashed potatoes evenly over the meat mixture. Sprinkle with shredded cheddar cheese.
- Bake for 25-30 minutes, or until the topping is golden brown and the filling is bubbly. Let stand a few minutes before serving.
