Hearty Shepherd's Pie

Ingredients

  • 1 tbsp olive oil
  • 1 lb ground lamb or beef
  • 1 onion, chopped
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1 cup beef broth
  • 2 tbsp Worcestershire sauce
  • 3 cups mashed potatoes
  • 1/2 cup shredded cheddar cheese

Steps

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large oven-safe skillet over medium-high heat. Brown ground meat, breaking it up with a spoon. Drain excess fat.
  3. Add chopped onion and mixed vegetables to the skillet. Cook for 5 minutes until softened. Stir in beef broth and Worcestershire sauce; simmer for 5 minutes.
  4. Spread the mashed potatoes evenly over the meat mixture. Sprinkle with shredded cheddar cheese.
  5. Bake for 25-30 minutes, or until the topping is golden brown and the filling is bubbly. Let stand a few minutes before serving.
