Any time I have something wonderful to celebrate, I have to bake a lemon meringue pie. Its bright, tangy flavor just perfectly matches my happy mood!
Sunny Lemon Meringue Pie
Ingredients
- 1 pre-made pie crust
- 4 large egg yolks
- 1 cup granulated sugar
- 1/2 cup fresh lemon juice
- Zest of 1 lemon
- 4 large egg whites
- 1/4 cup granulated sugar for meringue
Steps
- Bake pie crust according to package directions. Let cool.
- For filling: Whisk egg yolks, 1 cup sugar, lemon juice, and zest in a saucepan. Cook over medium heat, stirring constantly, until thickened. Pour into cooled crust.
- For meringue: Beat egg whites until soft peaks form, gradually add 1/4 cup sugar until stiff, glossy peaks form. Spread meringue over lemon filling, sealing to edges.
- Bake at 350°F (175°C) for 10-15 minutes, or until meringue is golden brown. Cool completely before serving.
