Any time I have something wonderful to celebrate, I have to bake a lemon meringue pie. Its bright, tangy flavor just perfectly matches my happy mood!

Sunny Lemon Meringue Pie

Ingredients

  • 1 pre-made pie crust
  • 4 large egg yolks
  • 1 cup granulated sugar
  • 1/2 cup fresh lemon juice
  • Zest of 1 lemon
  • 4 large egg whites
  • 1/4 cup granulated sugar for meringue

Steps

  1. Bake pie crust according to package directions. Let cool.
  2. For filling: Whisk egg yolks, 1 cup sugar, lemon juice, and zest in a saucepan. Cook over medium heat, stirring constantly, until thickened. Pour into cooled crust.
  3. For meringue: Beat egg whites until soft peaks form, gradually add 1/4 cup sugar until stiff, glossy peaks form. Spread meringue over lemon filling, sealing to edges.
  4. Bake at 350°F (175°C) for 10-15 minutes, or until meringue is golden brown. Cool completely before serving.
