It’s my niece’s birthday, and I’m just so happy! Baking a batch of colorful cupcakes to celebrate her special day always brings a smile to my face.
Vanilla Funfetti Cupcakes
Ingredients
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk
- 1/4 cup sprinkles
Steps
- Preheat oven to 175C (350F) and line a muffin tin. Whisk together flour, baking powder, and salt.
- Cream butter and sugar until light and fluffy. Beat in eggs one at a time, then vanilla. Gradually add dry ingredients alternately with milk, starting and ending with dry.
- Fold in sprinkles. Fill cupcake liners 2/3 full and bake for 18-22 minutes, or until a toothpick comes out clean. Let cool completely before frosting.
