Whenever I have something exciting planned, I treat myself to fresh sushi. It feels light, celebratory, and gets me even more pumped for whatever adventure is coming next!
Homemade Veggie Sushi Rolls
Ingredients
- 2 cups sushi rice, cooked and seasoned
- Nori sheets
- 1/2 cucumber, julienned
- 1/2 avocado, sliced
- 1 carrot, julienned
- Soy sauce and wasabi for serving
Steps
- Lay a nori sheet on a bamboo mat. Spread a thin layer of sushi rice evenly over nori, leaving a border at the top.
- Arrange cucumber, avocado, and carrot strips across the center of the rice.
- Carefully roll the mat tightly, pressing firmly. Moisten the top edge of the nori to seal.
- Slice the roll into 6-8 pieces with a sharp, wet knife. Serve with soy sauce and wasabi.
