There’s just something about the crack of the caramelized sugar on a Crème Brûlée that instantly makes any occasion feel special. It’s my go-to treat when there’s something to celebrate. Pure joy!

Classic Crème Brûlée

1 hour 30 minutes (includes chilling) • Medium

Ingredients

  • 2 cups heavy cream
  • 1/2 cup granulated sugar
  • 5 large egg yolks
  • 1 tsp vanilla extract
  • Extra sugar for topping

Steps

  1. Preheat oven to 325°F (160°C). Heat cream and sugar in a saucepan until sugar dissolves (do not boil).
  2. Whisk egg yolks and vanilla in a bowl. Slowly whisk in hot cream mixture.
  3. Pour custard into ramekins set in a baking dish. Fill dish with hot water halfway up ramekins.
  4. Bake 30-35 minutes until edges are set but centers jiggle slightly. Chill for at least 4 hours.
  5. Sprinkle sugar on top and caramelize with a kitchen torch or under broiler.
