On quiet mornings, a warm bowl of congee is incredibly peaceful and nourishing. It’s a gentle start to the day that always grounds me.
Basic Chicken Congee
Ingredients
- 1 cup short-grain white rice, rinsed
- 8 cups chicken broth or water
- 1/2 lb boneless, skinless chicken breast or thigh
- 1 inch ginger, sliced
- Salt to taste
- Optional toppings: chopped scallions, soy sauce, fried shallots
Steps
- In a large pot, combine rinsed rice, chicken broth (or water), chicken, and ginger slices. Bring to a boil over high heat.
- Reduce heat to low, cover, and simmer for at least 1-1.5 hours, stirring occasionally to prevent sticking, until rice has broken down into a creamy porridge consistency. Add more liquid if it becomes too thick.
- Remove chicken and ginger. Shred the chicken and return it to the congee. Season with salt to taste.
- Serve hot with your favorite toppings.
