Quick Tofu and Veggie Stir-Fry
Ingredients
- 1 block firm tofu, pressed and cubed
- 2 cups mixed stir-fry vegetables
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp cornstarch
- Cooked rice for serving
Steps
- Whisk together soy sauce, sesame oil, and cornstarch for the sauce.
- Heat a large skillet or wok with a little oil. Sauté tofu cubes until golden brown on all sides. Remove from pan.
- Add mixed vegetables to the pan and stir-fry until tender-crisp.
- Return tofu to the pan, pour in the sauce, and cook until thickened. Serve immediately over rice.
