Quick Tofu and Veggie Stir-Fry

Ingredients

  • 1 block firm tofu, pressed and cubed
  • 2 cups mixed stir-fry vegetables
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch
  • Cooked rice for serving

Steps

  1. Whisk together soy sauce, sesame oil, and cornstarch for the sauce.
  2. Heat a large skillet or wok with a little oil. Sauté tofu cubes until golden brown on all sides. Remove from pan.
  3. Add mixed vegetables to the pan and stir-fry until tender-crisp.
  4. Return tofu to the pan, pour in the sauce, and cook until thickened. Serve immediately over rice.
