Sweet Mango Sticky Rice

45 minutes • Easy

Ingredients

  • 1 cup glutinous rice
  • 1 can (13.5 oz) coconut milk
  • 1/2 cup granulated sugar
  • 1/4 tsp salt
  • 2 ripe mangoes, peeled and sliced
  • Toasted sesame seeds for garnish

Steps

  1. Rinse glutinous rice until water runs clear. Soak for 30 minutes, then steam for 20 minutes until cooked and translucent.
  2. While rice steams, heat coconut milk, sugar, and salt in a saucepan over medium heat until sugar dissolves. Do not boil.
  3. Pour half of the coconut milk mixture over the hot steamed rice. Stir well, cover, and let sit for 10 minutes.
  4. Serve warm sticky rice with fresh mango slices. Drizzle with remaining coconut sauce and sprinkle with sesame seeds.
