I’m always curious about new flavors, and Thai green curry never disappoints. Each spoonful reveals a new layer of taste, making it an exciting culinary journey every time.

Authentic Thai Green Curry with Chicken

Ingredients

  • 1 tbsp coconut oil
  • 1 lb chicken breast, sliced
  • 2-3 tbsp green curry paste
  • 1 can (13.5 oz) coconut milk
  • 1/2 cup chicken broth
  • 1 bell pepper, sliced
  • 1/2 cup bamboo shoots, sliced
  • Fish sauce to taste
  • Fresh basil leaves for garnish

Steps

  1. Heat coconut oil in a large pot or wok. Add chicken and stir-fry until almost cooked through. Remove chicken and set aside.
  2. Add green curry paste to the pot and stir-fry for 1 minute until fragrant.
  3. Pour in coconut milk and chicken broth, stirring well. Bring to a simmer.
  4. Return chicken to the pot. Add bell pepper and bamboo shoots. Simmer for 10-15 minutes until chicken is cooked and vegetables are tender-crisp. Season with fish sauce. Serve with jasmine rice and fresh basil.
