Quick Green Curry Fix
Ingredients
- 1 can (13.5 oz) coconut milk
- 2 tbsp green curry paste
- 1 lb chicken breast, sliced
- 1 cup bamboo shoots
- 1 cup bell peppers, sliced
- Fresh basil leaves for garnish
Steps
- Heat a pot over medium heat, add a little coconut milk and green curry paste, stir until fragrant.
- Add chicken and cook until no longer pink. Stir in remaining coconut milk and bamboo shoots.
- Bring to a simmer, add bell peppers and cook until tender. Serve hot with rice and fresh basil.
