Quick Green Curry Chicken
Ingredients
- 1 tbsp oil
- 1 lb chicken breast, sliced
- 2 tbsp green curry paste
- 1 can (13.5 oz) coconut milk
- 1 cup chopped bell peppers
- 1 cup snap peas
Steps
- Heat oil in a wok or large pan. Add chicken and stir-fry until cooked through.
- Stir in green curry paste and cook for 1 minute until fragrant. Pour in coconut milk and bring to a simmer.
- Add bell peppers and snap peas. Cook for 5-7 minutes until vegetables are tender-crisp. Serve hot with rice.
