Homemade Fish and Chips
Ingredients
- 2 large russet potatoes, cut into thick fries
- 1 lb firm white fish fillets (cod or haddock)
- 1 cup all-purpose flour
- 1 cup cold beer (lager)
- Salt and vinegar to taste
- Oil for frying
Steps
- Soak potato fries in cold water for 30 minutes, then pat dry. Fry in oil at 325°F (160°C) until tender, then remove.
- Whisk flour and beer to make a batter. Dip fish fillets into batter, ensuring they are fully coated.
- Increase oil temperature to 375°F (190°C). Fry fish for 5-7 minutes until golden and cooked through. Re-fry fries until golden and crispy.
- Serve hot with salt and vinegar. Tartar sauce is optional!
