When I need a burst of energy and something healthy, a vibrant chicken stir-fry always does the trick. It’s quick, colorful, and makes me feel ready to tackle anything!
Zesty Chicken & Veggie Stir-fry
Ingredients
- 1 lb boneless, skinless chicken breast, sliced
- 2 tbsp soy sauce
- 1 tbsp ginger, grated
- 1 tbsp sesame oil
- 3 cups mixed stir-fry vegetables
- Cooked rice for serving
Steps
- In a bowl, marinate sliced chicken with 1 tbsp soy sauce and grated ginger for 10 minutes.
- Heat sesame oil in a large wok or skillet over high heat. Add chicken and stir-fry until cooked through, about 5-7 minutes. Remove chicken and set aside.
- Add mixed vegetables to the wok and stir-fry for 3-5 minutes until crisp-tender. Return chicken to the wok.
- Add remaining 1 tbsp soy sauce, toss to combine. Serve immediately over cooked rice.
