Flavorful Misir Wot (Ethiopian Red Lentil Stew)
Ingredients
- 1 cup red lentils, rinsed
- 4 cups water or vegetable broth
- 1/4 cup niter kibbeh (spiced clarified butter) or olive oil
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons berbere spice blend
- 1 tomato, diced
- Salt to taste
Steps
- In a pot, combine rinsed lentils with water/broth and bring to a boil. Reduce heat and simmer for 15-20 minutes until tender. Drain excess liquid if necessary.
- In a separate pan, heat niter kibbeh/oil over medium heat. Add chopped onion and cook until softened and golden. Add garlic and ginger, cook for 1 minute until fragrant.
- Stir in berbere spice blend and cook for 2-3 minutes, adding a splash of water if needed to prevent burning. Add diced tomato and cook until softened.
- Add the cooked lentils to the spice mixture. Stir well, season with salt, and simmer for another 10-15 minutes, allowing flavors to meld. Serve hot with injera or rice.
