Anytime there’s something to celebrate, big or small, I instantly think of making a pavlova. Its light sweetness and fruit just feel so joyful and special.

Easy Berry Pavlova

1.5 hours (plus cooling) • Medium

Ingredients

  • 4 large egg whites
  • 1 cup caster sugar
  • 1 tsp white vinegar
  • 1 tsp cornflour
  • 1 cup whipped cream
  • Mixed berries for topping

Steps

  1. Preheat oven to 300°F (150°C). Whisk egg whites until stiff peaks form, gradually adding sugar until glossy.
  2. Gently fold in vinegar and cornflour. Spoon mixture onto parchment paper, forming a round shape with a slight dip in the center.
  3. Bake for 1 hour, then turn off oven and leave pavlova inside to cool completely for at least 30 minutes.
  4. Once cooled, top with whipped cream and fresh mixed berries before serving.
