Vietnamese Fresh Spring Rolls

Ingredients

  • Rice paper wrappers
  • Cooked shrimp
  • Vermicelli noodles
  • Lettuce
  • Mint leaves
  • Cucumber
  • Peanut dipping sauce

Steps

  1. Cook vermicelli noodles according to package directions, then rinse with cold water.
  2. Prepare shrimp, lettuce, mint, and julienned cucumber.
  3. Dip one rice paper wrapper in warm water until pliable. Lay flat, then arrange shrimp, noodles, lettuce, mint, and cucumber on it.
  4. Fold in the sides, then roll tightly from the bottom up. Serve immediately with peanut sauce.
