On a cozy, relaxed weekend, there’s nothing better than a classic tomato soup paired with a perfectly gooey grilled cheese sandwich. It’s simple, comforting, and always hits the spot.

Creamy Tomato Soup with Grilled Cheese

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 28 oz can crushed tomatoes
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • 4 slices bread
  • 2 slices cheddar cheese
  • Butter for grilling

Steps

  1. For soup: Heat olive oil, sauté onion until soft, add garlic, then crushed tomatoes and broth. Simmer for 15 minutes. Stir in cream, season.
  2. For grilled cheese: Butter one side of each bread slice. Place cheese between unbuttered sides.
  3. Cook sandwich in a pan over medium heat until golden brown on both sides and cheese is melted.
  4. Serve hot soup with the grilled cheese on the side.
