When I want to celebrate something, big or small, I always make biryani. The rich spices and aromas just fill our home with such joy and make every meal feel special.

Simple Chicken Biryani

Ingredients

  • 1 lb chicken thighs, cut into pieces
  • 1 cup basmati rice
  • 1/2 cup plain yogurt
  • 1 onion, sliced
  • 1 tbsp biryani masala
  • Fresh cilantro and mint for garnish

Steps

  1. Marinate chicken in yogurt and biryani masala for 30 minutes.
  2. Cook basmati rice until 70% done and set aside.
  3. Sauté onions until golden. Add marinated chicken and cook until almost done.
  4. Layer half the rice over chicken, then add remaining chicken, and top with remaining rice. Cover and cook on low heat for 15-20 minutes until rice is fully cooked and flavors meld. Garnish with fresh herbs.
