Spicy Nigerian Jollof Rice
Ingredients
- 2 cups parboiled rice
- 1 can chopped tomatoes
- 1 large onion, chopped
- 2 red bell peppers
- Habanero pepper to taste
- Chicken stock or water
Steps
- Blend tomatoes, bell peppers, and habanero until smooth. Sauté chopped onion in oil until translucent.
- Add blended pepper mixture to onions and fry until oil separates. Add tomato paste and fry for another 5 minutes.
- Pour in chicken stock, season with salt and spices (thyme, curry powder). Bring to a boil.
- Add parboiled rice, stir, cover tightly, and reduce heat to low. Cook for 25-30 minutes until rice is tender.
- Fluff with a fork and serve hot.
