On a rainy day, a hearty bowl of lentil soup is my absolute go-to. It warms me from the inside out and always makes me feel so wonderfully comforted.
Spiced Moroccan Lentil Soup
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup brown or green lentils, rinsed
- 4 cups vegetable broth
- 1 carrot, diced
- 1 tsp cumin
- 1/2 tsp turmeric
Steps
- Heat olive oil in a large pot. Sauté onion until softened, then add garlic, cumin, and turmeric, cooking for 1 minute.
- Stir in rinsed lentils, vegetable broth, and diced carrot.
- Bring to a boil, then reduce heat, cover, and simmer for 40-50 minutes, or until lentils are tender.
- Season with salt and pepper to taste. Serve hot, perhaps with a squeeze of lemon.
