After a heavy meal or a hot day, a crisp Fattoush salad always leaves me feeling incredibly refreshed and light. It’s the perfect balance of fresh veggies and tangy dressing.

Crisp Lebanese Fattoush Salad

20 minutes • Easy

Ingredients

  • 2 cups mixed greens
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup radishes, sliced
  • 2 pita breads, toasted and broken into pieces
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp sumac
  • Salt and pepper to taste

Steps

  1. Combine mixed greens, cucumber, tomatoes, red onion, and radishes in a large bowl.
  2. In a small bowl, whisk together olive oil, lemon juice, sumac, salt, and pepper to make the dressing.
  3. Add toasted pita pieces to the salad. Pour dressing over the salad and toss gently to coat.
  4. Serve immediately for maximum crispness.
