Fresh Lime Ceviche
Ingredients
- 1 lb firm white fish (cod or tilapia), diced
- 1 cup fresh lime juice
- 1/2 red onion, thinly sliced
- 1/4 cup chopped cilantro
- 1 aji amarillo pepper, minced
Steps
- Place diced fish in a non-reactive bowl.
- Pour fresh lime juice over the fish, ensuring it's fully submerged. Marinate for 15-20 minutes until opaque.
- Drain most of the lime juice, then stir in sliced red onion, chopped cilantro, and minced aji amarillo.
- Serve immediately, perhaps with sweet potato or corn.
