Traditional Miso Soup

Ingredients

  • 4 cups dashi (Japanese soup stock)
  • 3 tablespoons white miso paste
  • 4 oz silken tofu, diced
  • 2 green onions, thinly sliced
  • 1 sheet nori, cut into thin strips (optional)

Steps

  1. Heat dashi in a saucepan over medium heat until just simmering. Do not boil.
  2. In a small bowl, scoop out a ladleful of dashi and whisk it with the miso paste until smooth. Pour the miso mixture back into the saucepan and stir gently.
  3. Add diced tofu to the soup and simmer for 2-3 minutes, ensuring the soup does not boil (boiling can diminish miso flavor and nutrients).
  4. Ladle into bowls, garnish with sliced green onions and nori strips if desired. Serve immediately.
