Decadent Chocolate Lava Cakes

Ingredients

  • 1/2 cup (1 stick) unsalted butter
  • 4 oz good quality dark chocolate, chopped
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • Pinch of salt
  • Powdered sugar for dusting

Steps

  1. Preheat oven to 425°F (220°C). Butter and flour four 6-ounce ramekins.
  2. In a microwave-safe bowl, melt butter and chocolate together in 30-second intervals, stirring until smooth. Let cool slightly.
  3. In a separate bowl, whisk together eggs, egg yolks, and sugar until light and fluffy. Gently fold in the melted chocolate mixture.
  4. Fold in flour and salt until just combined. Divide batter evenly among the prepared ramekins. Bake for 12-14 minutes, or until the edges are set but the center is still jiggly. Let cool for 1 minute, then invert onto plates. Dust with powdered sugar and serve immediately.
