Vibrant Thai Green Curry (Quick Version)
Ingredients
- 1 can (13.5 oz) coconut milk
- 2 tablespoons green curry paste
- 1 lb chicken breast, sliced
- 1 cup mixed vegetables (e.g., bell peppers, snap peas)
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- Fresh basil leaves for garnish
Steps
- Heat 1 tablespoon of coconut milk in a pot over medium heat. Add green curry paste and cook for 1-2 minutes until fragrant.
- Add chicken and cook until no longer pink. Stir in remaining coconut milk, fish sauce, and brown sugar.
