Bright and tangy lemon bars always make me feel hopeful, especially in spring. Their sunny flavor just brightens my whole outlook.

Zesty Lemon Bars

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup cold butter, cubed
  • 4 large eggs
  • 1 1/2 cups granulated sugar
  • 1/4 cup fresh lemon juice
  • Pinch of lemon zest

Steps

  1. Preheat oven to 350°F (175°C). For the crust, combine flour, powdered sugar, and butter. Press into an 8x8 inch baking pan and bake for 15-20 minutes until lightly golden.
  2. While crust bakes, whisk together eggs, granulated sugar, lemon juice, and lemon zest.
  3. Pour the lemon mixture over the hot crust. Return to oven and bake for another 20-25 minutes, or until the filling is set.
  4. Cool completely before dusting with powdered sugar and cutting into bars.
