Creamy Stovetop Mac and Cheese

Ingredients

  • 1 lb elbow macaroni
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 3 cups milk
  • 2 cups shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • Salt and black pepper to taste

Steps

  1. Cook macaroni according to package directions; drain and set aside.
  2. In a large saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
  3. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly, until thickened.
  4. Remove from heat. Stir in cheddar and Monterey Jack cheeses until melted and smooth. Add cooked macaroni, salt, and pepper. Serve immediately.
