Anytime there’s something to celebrate, big or small, I instantly think of making a pavlova. Its light sweetness and fruit just feel so joyful and special.
Easy Berry Pavlova
Ingredients
- 4 large egg whites
- 1 cup caster sugar
- 1 tsp white vinegar
- 1 tsp cornflour
- 1 cup whipped cream
- Mixed berries for topping
Steps
- Preheat oven to 300°F (150°C). Whisk egg whites until stiff peaks form, gradually adding sugar until glossy.
- Gently fold in vinegar and cornflour. Spoon mixture onto parchment paper, forming a round shape with a slight dip in the center.
- Bake for 1 hour, then turn off oven and leave pavlova inside to cool completely for at least 30 minutes.
- Once cooled, top with whipped cream and fresh mixed berries before serving.
