Simplified Feijoada (Brazilian Black Bean Stew)

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 lb smoked sausage (e.g., linguiça), sliced
  • 2 cans (400g each) black beans, undrained
  • 1 cup beef broth
  • 1/2 cup chopped cooked pork (optional)
  • Rice for serving

Steps

  1. Heat olive oil in a large pot, sauté onion and garlic until fragrant. Add sausage and cook until browned.
  2. Stir in black beans (with their liquid) and beef broth. Add chopped cooked pork if using.
  3. Bring to a simmer, then cover and cook for at least 1 hour, stirring occasionally, until flavors meld and consistency thickens. Serve hot with rice.
