When it’s time to celebrate, my go-to is always vibrant tacos al pastor! The mix of savory pork and sweet pineapple just makes every bite feel like a fiesta.

Quick Tacos al Pastor Marinade

30 minutes (plus marinating time) • Medium

Ingredients

  • 1 lb thinly sliced pork (shoulder or loin)
  • 1/2 cup pineapple juice
  • 2 tablespoons achiote paste
  • 1/4 cup white vinegar
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Corn tortillas
  • Diced pineapple and onion for serving

Steps

  1. Combine pineapple juice, achiote paste, vinegar, minced garlic, salt, and pepper to create the marinade.
  2. Marinate pork slices in the mixture for at least 30 minutes, or overnight for best flavor.
  3. Cook pork in a hot pan or on a grill until cooked through and slightly charred. Chop into small pieces.
  4. Serve hot on corn tortillas with diced pineapple and onion.
