Flavorful Ghanaian Jollof Rice

Ingredients

  • 2 cups long-grain rice
  • 1/2 cup vegetable oil
  • 2 onions, chopped
  • 1 bell pepper, diced
  • 1 can (400g) crushed tomatoes
  • 1/4 cup tomato paste
  • 2 cups chicken or vegetable broth
  • 1 tbsp curry powder
  • 1 tsp dried thyme
  • Salt and pepper to taste

Steps

  1. Wash rice until water runs clear. Heat oil in a large pot, sauté onions and bell pepper until soft. Add crushed tomatoes and tomato paste, cook for 10 minutes.
  2. Stir in broth, curry powder, thyme, salt, and pepper. Bring to a boil. Add rice, stir once, cover tightly, and reduce heat to low.
  3. Cook for 30-40 minutes until rice is tender and liquid is absorbed. Let it rest, covered, for 10 minutes before fluffing with a fork.
