Vibrant Thai Green Curry with Chicken
Ingredients
- 1 tbsp coconut oil
- 400ml coconut milk
- 2 tbsp green curry paste
- 300g chicken breast, sliced
- 1 cup mixed vegetables (e.g., bell peppers, green beans)
- 1 tbsp fish sauce
- 1 tsp brown sugar
- Fresh basil or cilantro for garnish
Steps
- Heat coconut oil in a pot, add green curry paste and cook for 1 minute until fragrant. Stir in coconut milk.
- Add sliced chicken and simmer until cooked through. Stir in mixed vegetables, fish sauce, and brown sugar.
- Cook for another 5-7 minutes until vegetables are tender-crisp. Serve hot with rice, garnished with fresh herbs.
