Creamy Spanish Rice Pudding
Ingredients
- 1 cup short-grain rice
- 4 cups milk
- 1/2 cup sugar
- 1 cinnamon stick
- Lemon peel from 1/2 lemon
- Pinch of salt
Steps
- Combine rice, milk, sugar, cinnamon stick, lemon peel, and salt in a saucepan. Bring to a boil, then reduce heat to low.
- Simmer uncovered for 30-40 minutes, stirring frequently, until rice is tender and mixture is creamy.
- Remove cinnamon stick and lemon peel before serving warm or chilled. Garnish with a sprinkle of cinnamon if desired.
