On quiet mornings, a warm bowl of congee is incredibly peaceful and nourishing. It’s a gentle start to the day that always grounds me.

Basic Chicken Congee

1 hour 30 minutes • Easy

Ingredients

  • 1 cup short-grain white rice, rinsed
  • 8 cups chicken broth or water
  • 1/2 lb boneless, skinless chicken breast or thigh
  • 1 inch ginger, sliced
  • Salt to taste
  • Optional toppings: chopped scallions, soy sauce, fried shallots

Steps

  1. In a large pot, combine rinsed rice, chicken broth (or water), chicken, and ginger slices. Bring to a boil over high heat.
  2. Reduce heat to low, cover, and simmer for at least 1-1.5 hours, stirring occasionally to prevent sticking, until rice has broken down into a creamy porridge consistency. Add more liquid if it becomes too thick.
  3. Remove chicken and ginger. Shred the chicken and return it to the congee. Season with salt to taste.
  4. Serve hot with your favorite toppings.
