On a cold day, when I need to feel grounded and warm from the inside out, a big bowl of hearty beef stew is exactly what I crave. It’s honest, comforting food that always hits the spot.

Classic Hearty Beef Stew

Ingredients

  • 2 tbsp olive oil
  • 1.5 lbs beef chuck, cut into 1-inch cubes
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp all-purpose flour
  • 2 sprigs fresh thyme
  • Salt and black pepper to taste

Steps

  1. Heat olive oil in a large Dutch oven over medium-high heat. Brown beef cubes in batches; remove and set aside.
  2. Add onion, carrots, and celery to the pot; cook until softened, about 5-7 minutes. Stir in flour and cook for 1 minute.
  3. Return beef to the pot. Pour in beef broth and diced tomatoes. Add thyme sprigs, salt, and pepper. Bring to a simmer.
  4. Reduce heat to low, cover, and cook for 1.5 to 2 hours, or until beef is very tender. Remove thyme sprigs before serving hot.
