After a really tough day at work, I crave the intense flavors of a spicy Thai green curry. The heat somehow melts away all my stress, leaving me feeling energized and ready to tackle tomorrow.

Quick Green Curry Chicken

Ingredients

  • 1 tbsp oil
  • 1 lb chicken breast, sliced
  • 2 tbsp green curry paste
  • 1 can (13.5 oz) coconut milk
  • 1 cup chopped bell peppers
  • 1 cup snap peas

Steps

  1. Heat oil in a wok or large pan. Add chicken and stir-fry until cooked through.
  2. Stir in green curry paste and cook for 1 minute until fragrant. Pour in coconut milk and bring to a simmer.
  3. Add bell peppers and snap peas. Cook for 5-7 minutes until vegetables are tender-crisp. Serve hot with rice.
