When I’m feeling a bit down, nothing brings me back to my childhood quite like a bowl of Abuela’s Arroz con Leche. It’s the ultimate comfort food, full of sweet memories and warmth.

Classic Arroz con Leche

45 minutes • Easy

Ingredients

  • 1 cup short-grain rice
  • 4 cups milk
  • 1/2 cup sugar
  • 1 cinnamon stick
  • Lemon peel (from 1/2 lemon)

Steps

  1. Rinse rice and combine with milk, cinnamon stick, and lemon peel in a saucepan.
  2. Bring to a simmer over medium heat, then reduce heat to low and cook, stirring occasionally, for 30-35 minutes until rice is tender and mixture is creamy.
  3. Stir in sugar and cook for another 5 minutes. Remove cinnamon stick and lemon peel before serving warm or chilled.
