Authentic Carbonara
Ingredients
- 8 oz spaghetti
- 4 oz guanciale or pancetta, diced
- 2 large eggs
- 1/2 cup grated Pecorino Romano
- Black pepper, freshly ground
Steps
- Cook spaghetti according to package directions until al dente.
- While pasta cooks, crisp guanciale in a pan; remove from heat.
- Whisk eggs, Pecorino Romano, and a generous amount of black pepper.
- Drain pasta, reserving some water. Toss pasta with guanciale, then quickly add egg mixture, stirring vigorously. Add pasta water as needed to create a creamy sauce.
