Creamy Tomato Soup

30 minutes • Easy

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cans (28 oz) crushed tomatoes
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Steps

  1. Sauté onion in olive oil until soft.
  2. Add crushed tomatoes and vegetable broth, bring to a simmer.
  3. Cook for 20 minutes, then blend until smooth.
  4. Stir in heavy cream, season with salt and pepper, and heat through.
