I’m always curious to try new things in the kitchen, and making sushi rolls at home is such a fun challenge. It’s rewarding to see the beautiful results!

Easy Veggie Sushi Rolls

Ingredients

  • 2 cups sushi rice, cooked
  • 1/4 cup rice vinegar
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 4 sheets nori
  • 1/2 cucumber, julienned
  • 1 carrot, julienned
  • 1/2 avocado, sliced
  • Soy sauce for dipping

Steps

  1. Prepare sushi rice. While warm, mix with rice vinegar, sugar, and salt. Let cool.
  2. Place a sheet of nori on a bamboo mat. Spread a thin layer of sushi rice over the nori, leaving a border at the top.
  3. Arrange cucumber, carrot, and avocado strips across the bottom third of the rice.
  4. Carefully roll the sushi tightly from the bottom, using the mat to help. Seal the edge with a little water.
  5. Slice the roll into 6-8 pieces with a sharp, wet knife. Serve with soy sauce.
