Sunday mornings are for relaxation, and nothing helps me ease into the day quite like a stack of fluffy lemon ricotta pancakes. They’re a little bit fancy, but so easy and delicious.

Fluffy Lemon Ricotta Pancakes

25 minutes • Easy

Ingredients

  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup milk
  • 1/2 cup ricotta cheese
  • 1 large egg
  • Zest of 1 lemon
  • Butter for cooking

Steps

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk milk, ricotta, egg, and lemon zest. Pour wet ingredients into dry and mix until just combined (don't overmix).
  3. Heat a lightly buttered griddle or non-stick pan over medium heat. Pour 1/4 cup batter per pancake.
  4. Cook for 2-3 minutes per side, until golden brown and cooked through. Serve with syrup and fresh berries.
