There are days when only true comfort food will do. A warm bowl of tomato soup with a gooey grilled cheese sandwich always makes me feel better.

Creamy Tomato Soup & Grilled Cheese

Ingredients

  • Canned crushed tomatoes
  • Chicken or vegetable broth
  • Heavy cream
  • Fresh basil
  • White bread
  • Cheddar cheese
  • Butter

Steps

  1. For the soup: Simmer crushed tomatoes, broth, and torn basil leaves for 15 minutes. Blend until smooth, then stir in heavy cream.
  2. For the grilled cheese: Butter one side of two slices of bread. Place one slice butter-side down in a pan, top with cheddar cheese, then the second slice butter-side up.
  3. Grill over medium heat until golden brown on both sides and cheese is melted.
  4. Serve the hot soup with the grilled cheese sandwich on the side for dipping.
