When there’s something to celebrate, my family tradition is to make a big, glorious pan of paella. The vibrant colors and rich flavors just scream festivity!
Seafood Paella
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 1 cup bomba rice
- 4 cups chicken broth
- 1/2 tsp saffron threads
- 1/2 lb shrimp
- 1/2 lb mussels
- 1/2 cup peas
- Lemon wedges
Steps
- Heat olive oil in a paella pan. Sauté onion, bell pepper, and garlic. Add rice and stir.
- Pour in broth with saffron. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Add shrimp and mussels, arranging them on top. Cover and cook for another 10-15 minutes until liquid is absorbed and seafood is cooked.
- Stir in peas, cover again for a few minutes. Serve with lemon wedges.
