Spicy Island Jerk Chicken
Ingredients
- 2 lbs chicken thighs or drumsticks
- 1/4 cup jerk seasoning paste
- 2 tbsp olive oil
- 1 lime, juiced
- 1/2 tsp salt
- Rice and peas for serving
Steps
- Marinate chicken with jerk seasoning, olive oil, lime juice, and salt for at least 2 hours (preferably overnight).
- Preheat oven to 400°F (200°C).
- Roast chicken for 45-55 minutes, or until cooked through and skin is crispy.
- Alternatively, grill over medium heat, turning occasionally, until cooked.
- Serve with rice and peas.
