Vanilla Funfetti Cupcakes
Ingredients
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk
- 1/4 cup sprinkles (for batter)
- Vanilla buttercream frosting
- Extra sprinkles for topping
Steps
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then vanilla extract.
- Alternately add dry ingredients and milk to the wet ingredients, beginning and ending with dry, mixing until just combined. Fold in 1/4 cup sprinkles.
- Divide batter among muffin cups. Bake for 18-22 minutes, or until a toothpick inserted comes out clean. Let cool completely. Frost with vanilla buttercream and add extra sprinkles.
