Quick Green Curry Fix

Ingredients

  • 1 can (13.5 oz) coconut milk
  • 2 tbsp green curry paste
  • 1 lb chicken breast, sliced
  • 1 cup bamboo shoots
  • 1 cup bell peppers, sliced
  • Fresh basil leaves for garnish

Steps

  1. Heat a pot over medium heat, add a little coconut milk and green curry paste, stir until fragrant.
  2. Add chicken and cook until no longer pink. Stir in remaining coconut milk and bamboo shoots.
  3. Bring to a simmer, add bell peppers and cook until tender. Serve hot with rice and fresh basil.
