To feel balanced and grounded, I often make a stir-fry with plenty of fresh vegetables and tofu. It’s light, nutritious, and always satisfying.
Easy Tofu and Veggie Stir-fry
Ingredients
- 1 block (14 oz) firm tofu, pressed and cubed
- 1 tbsp sesame oil
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1/4 cup soy sauce
- 1 tbsp cornstarch
- Cooked rice for serving
Steps
- Heat sesame oil in a large skillet or wok over medium-high heat. Add tofu and cook until golden brown on all sides. Remove from pan.
- Add bell pepper and broccoli to the same pan. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
- In a small bowl, whisk together soy sauce and cornstarch. Pour sauce over vegetables and stir until it thickens.
- Return tofu to the pan and toss to coat. Serve immediately over cooked rice.
