I find such peace and contentment when I’m making sushi rolls. It’s a mindful process, and the fresh flavors always make me happy.

Basic California Rolls

Ingredients

  • 2 cups sushi rice, cooked
  • 4 sheets nori seaweed
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • 1/2 lb imitation crab sticks
  • Soy sauce and wasabi for serving

Steps

  1. Prepare sushi rice according to package directions and let cool slightly.
  2. Lay a sheet of nori on a bamboo rolling mat. Spread a thin layer of sushi rice evenly over the nori, leaving a border at the top.
  3. Arrange avocado, cucumber, and crab sticks in a line across the center of the rice.
  4. Carefully roll the mat tightly from the bottom, pressing gently. Slice the roll into 6-8 pieces and serve with soy sauce and wasabi.
