Whenever there’s something to celebrate, my family always makes a huge paella. The vibrant colors and shared experience just embody joy and festivity for me.

Classic Seafood Paella

Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 cup Arborio rice
  • 4 cups chicken or vegetable broth
  • Pinch of saffron threads
  • 1/2 lb shrimp, peeled and deveined
  • 1/2 lb mussels or clams, scrubbed
  • 1/4 cup frozen peas
  • Lemon wedges for serving

Steps

  1. Heat olive oil in a large paella pan or wide skillet. Sauté onion, garlic, and bell pepper until softened.
  2. Stir in rice and cook for 2 minutes, ensuring grains are coated.
  3. Pour in broth and saffron threads. Bring to a simmer, spreading rice evenly. Do not stir. Cook for 15 minutes.
  4. Arrange shrimp, mussels/clams, and peas over the rice. Cover and cook for another 10-15 minutes, or until rice is tender and seafood is cooked through. Let rest for 5 minutes before serving with lemon wedges.
