When I’m feeling energized and want a wholesome meal, I love making stuffed bell peppers. They’re colorful, packed with goodness, and always hit the spot!

Classic Beef & Rice Stuffed Peppers

Ingredients

  • 4 large bell peppers, halved
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 can (14.5oz) diced tomatoes, undrained
  • 0.5 cup shredded cheese
  • 1 onion, chopped
  • Salt, pepper, garlic powder

Steps

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Brown ground beef and onion in a skillet; drain fat. Stir in cooked rice, diced tomatoes, salt, pepper, and garlic powder.
  3. Place bell pepper halves in the baking dish. Fill each half with the beef and rice mixture. Top with shredded cheese.
  4. Bake for 30-40 minutes, or until peppers are tender and cheese is melted and bubbly.
